Eggless-Cake
Egg-less Coconut cake is a soft, fluffy, and moist cake that
can uplift your mood at any time of the day. The traditional Egg-less coconut cake
recipe is from the southern regions of INDIA. Usually filling layers of coconut
pastry in between the cake is the traditional method to prepare this cake with
a white frosting and shredded coconut.
The other version of this cake is called coconut
poke cake where holes are made into the cake so that it absorbs most of the
liquid ingredients and become moister. But in today’s blog I shall share with
you the simple way to prepare the delicious coconut cake. It is not really
extravagant and requires very common food ingredients. Good news is that it
will not take a lot of time to arrange and bake this cake.

recipe:

Ingredients:
- 1 cup white flour (maida)
- 1 cup butter
- 1 cup sugar
- 1 cup milk/coconut milk
- 1 teaspoon vanilla essence
- 1 teaspoon baking soda
- A pinch of salt
- 1 tablespoon whipped cream
- 1/2 cup of shredded coconut
- Sprinkle of icing sugar (optional)
Instructions:
- Preheat the oven to 180 degree centigrade
- Start to mix butter with sugar till you get a fluffy and creamy mixture
- Now mix flour, salt, and baking soda in another bowl
- Start to mix the flour mixture and milk/coconut milk in turns to the butter mixture
- At this point add the vanilla essence to the cake batter
- Pour the batter on a baking tray and bake it for 35-40 minutes in the preheated oven
- Once the baking is over, take it out and let it cool down
- The final touches would be to apply whipped cream, sprinkle of
shredded coconut, and icing sugar
Tips:
- You can add egg whites after the vanilla essence is added in the cake mix
- Instead of whipped cream you can use 50 gm melted chocolate if you are a chocolate lover
